This can only mean one thing - pumpkin season is here and with it, soup season! Here is a delicious butternut squash soup for you to enjoy on those cold autumn days that will warm you from the inside out.

How to:
Dice the butternut squash into medium-sized cubes. Roughly chop onion, garlic and chili. Add ingredients to a pot and saute for a couple minutes until the vegetables are slightly charred. Add vegetable stock (just over half to start) and bring to a boil.
Remove from the heat and mix with a blender or a hand blender until smooth. Add vegetable stock as needed.
Serve with toppings of your choice.
