Gnocchi with Spinach and Tomatoes

This quick and easy to make gnocchi with spinach and tomatoes is packed full of flavour and will quickly become a family favourite! 



Ingredients:

  • 1 pack gnocchi
  • 250g cherry tomatoes
  • 200g spinach 
  • 1 red onion
  • 3 cloves of garlic
  • 150g philadelphia cheese 
  • 20ml vegetable or chicken stock
  • Salt & pepper to taste
  • Chili flakes
  • Cooking butter


How to:

Chop the onion and garlic and cut the tomatoes in halves. In a deep non-stick pan, saute the onion and garlic, adding the tomatoes after a couple of minutes. Add salt, pepper and chili flakes to taste. Once charred, place in a separate bowl and set aside. 


Bring water to the boil and cook gnocchi as instructed on the packaging. In the non-stick pan, add vegetable stock and philadelphia cheese over medium heat. Stir well, then add the tomatoes, onion and garlic, along with the spinach. Let it simmer for a couple minutes, then add the gnocchi when done. Serve with a sprinkle of parmesan on top.
