Lemon Salmon with Sweet Potato Fries and Guacamole

This tasty and healthy meal is easy to make and will take any mid-week night to the next level. The mix of flavours combine perfectly and the best part of all this meal is the perfect balance of protein, fats, carbs and fiber - all the things needed for a well balanced diet. 



Ingredients:

  • 4 slices salmon (we get frozen to save on cost)
  • 4 sweet potatoes
  • 2 avocados
  • 1 lemon
  • 1 clove garlic
  • Mixed seasonal salad
  • Olive oil
  • Salt & pepper
  • Rosemary 

How to:

Preheat the oven to 220 C. Cut the sweet potatoes into long slices (about 3-4 cm thick) and place on a baking tray. Drizzle with olive oil, add salt, pepper and rosemary and mix until the sweet potatoes are evenly coated. Spread out the sweet potatoes so they are not touching each other - this is for a more even cook and crispier edges. 


Place in the top part of the oven for 20 minutes. After 20 minutes, flip the sweet potatoes and cook for another 10 minutes.


Whilst the sweet potato is in the oven, make the guacamole by mushing the avocados in a bowl. Add the garlic with a garlic press and squeeze in half a lemon. Mix well and add salt & pepper to taste. 


Fry the salmon on medium-high heat for a couple minutes on either side to get a char. Make sure not to over cook them. Slice the second half of the lemon and add it into the pan for that extra lemony flavour to the salmon. Serve with a mixed seasonal side salad drizzled with olive oil.
