Quesadillas are an all time favourite, easy-to-make Mexican snack. Perfect in-between meals, as a starter or even as a lighter lunch.

Heat a non-stick pan to medium heat. Put a tortilla flat into the pan and add cheese and any other filling you may want to one half of the tortilla and fold the other half over. Fry on both sides until the tortilla is crispy and the cheese has melted. Careful not to burn the tortilla.
Mix the avocado to a smooth consistency. Ensure the quesadillas are dipped in guacamole and refried beans. Add your favourite spicy salsa if you want a little extra kick.
