This hearty and spicy tomato soup is just the thing to warm you on cold winter nights. The garlic and chili will also help boost your immune system against those nasty flues that are common during the cold months. Enjoy this soup with some delicious bread and cozy up by the fire.
How to:
(optional step to remove tomato skin) Put on a pot of water and bring to a boil. Turn off the heat and add the tomatoes. Remove after a few minutes, when the peel starts to crack. With the help of tongs or forks, carefully remove the skin.
Roughly chop the zucchini, onion, garlic and chili. Fry all together in a non/stick pan until slightly charred. Add tomatoes and vegetable stock (start with about 500ml) and bring to a boil.
Remove from the heat and add it to a blender or hand blend it to a smooth liquid. Add vegetable stock as needed. Put back on low heat and add cream cheese, salt, pepper, herbs and chili flakes to taste. Simmer for a couple of minutes.
