Swedish Mud Cake with Whipped Cream

This traditional Swedish chocolate cake is a favourite for kids and adults alike. With a sticky, gooey center and fluffy whipped cream on top - what more could you ask for!?
Ingredients:
- 150g cooking butter
- 3 eggs
- 30 ml caster sugar
- 30 ml plain wheat flour
- 10 ml cocoa
- 1 tbsp vanilla sugar
- A pinch of salt
- 30ml whipping cream
How to:
Preheat the oven to 175C. Melt the butter and set aside to cool. In a mixing bowl, add eggs and sugar and mix until fluffy and white. In a separate bowl mix all the dry ingredients and gently fold into the egg mixture. Add the melted butter.
Butter and coat a baking tin of 24cm. Pour mixture into the baking tin and stick it in the middle of the oven for 20-25 minutes. After about 20 minutes give it a poke with a stick, it should be sticky inside but not runny.
Whip the cream and serve together. You can also add fresh berries for extra flavour.
