Swedish Pancakes

Traditional Swedish pancakes are easy to make and fun for the whole family to enjoy. Unlike American pancakes, Swedish pancakes are thinner and more like crepes in look and taste. Traditionally they are served with whipped cream and jam and are enjoyed on Thursday nights rather than in the morning, making it a family favourite for many Swedes.


Ingredients:

  • 3 eggs
  • 60ml milk 
  • 30ml flour
  • Pinch of salt
  • Cooking butter for the pan 


How To:

Mix the eggs and half of the milk in a large mixing bowl until fully combined. Add the flour and salt and beat the mixture until all the lumps are gone. Add the rest of the milk and mix to a smooth batter. 


Heat a non-stick pan to medium heat and fry about 10ml of batter at a time for a few minutes per side until golden and cooked through. Use cooking butter before each new pancake to make sure they get nice crispy edges. 


Serve with whipped cream and your favourite flavour of jam or fresh berries.


You can also stack the pancakes with a thin layer of nutella in between each layer to make a pancake-cake. Top that with whipped cream and berries and serve as cake slices.
